Samppanjakuppikakut (Champagne cupcakes)

Viime viikonloppuna jA�rjestettiin HelsingissA� Grand Champagne -tapahtuma. Sain idean samppanjakuppikakuista ja pitihA�n se testata. SekA� kuppikakkutaikinassa, ettA� kuorrutteessa on kA�ytetty samppanjaa. Koska kuppikakkuun menee pikkolopullosta vain pieni osa, voit hyvin juoda lopun samppanjan samalla kun syA�t kuppikakkua 🙂


Last weekend was Grand Champagne event in Helsinki. I just had an idea from champagne cupcakes and I had to test those. There is champagne in cupcakes and also in the frosting. BecauseA�only a small part of the champagne are used in this recipe, you can drink the end of a champagne while eating a cupcake 🙂

Samppanjakuppikakut (Champagne cupcakes)

Ingredients:

  • Kuppikakut:
  • 3,5 dl jauhoja
  • 0,5 tl soodaa
  • 0,5 tl suolaa
  • 1,5 dl sokeria
  • 1,25 dl A�ljyA�
  • 0,4 dl samppanjaa
  • 0,5 dl piimA�A�
  • 1 iso kananmuna
  • 0,5 tl valkoista viinietikkaa
  • Kuorrute:
  • 100 g voita
  • 2,5 dl tomusokeria
  • 1,5 rkl samppanjaa

  • Cupcakes:
  • 1,25 cup flour
  • 0,5 tsp baking soda
  • 0,5 tsp salt
  • 0,5 cup and 2 tbsp sugar
  • 0,5 cup vegetable oil
  • 0,15 cup champagne
  • 0,2 cup buttermilk
  • 1 large egg
  • 0,5 tsp white vinegar
  • Frosting:
  • 100 g butter
  • 1 cup icing sugar
  • 1,5 tbsp champagne

Directions:

  1. Kuumenna uuni 175 asteeseen. Vuoraa muffinipellin kolot paperivuoilla.
  2. YhdistA� jauhot, sooda, suola ja sokeri isossa kulhossa ja sekoita ainekset sekaisin. YhdistA� toisessa kulhossa A�ljy, samppanja, piimA�, muna ja viinietikka. LisA�A� nestemA�iset aineet hitaasti kuiviin ja sekoita vain sen verran ettA� ainekset ovat sekoittuneet.
  3. Lusikoi taikina kuppikakkuvuokiin, tA�yttA�en noin 3/4 osaa. Paista kuppikakkuja uunissa 15-17 minuuttia tai niin kauan, kunnes kuppikakun keskelle tyA�nnetty testitikku tulee puhtaana ulos.
  4. JA�A�hdytA� kuppikakut ritilA�n pA�A�llA� ennen kuorruttamista.
  5. Vatkaa voita monitoimikoneessa, kunnes siitA� tulee sileA�A� ja kuohkeaa. LisA�A� joukkoon samppanja ja jatka sekoittamista, kunnes sekoittuneet. LisA�A� tomusokeri kahdessa osassa ja sekoita sileA�ksi ja kevyeksi. Kuorruta jA�A�htyneet kuppikakut ja koristele nonparelleilla.

  7. Preheat oven to 350 degrees F. Put cupcake liners in cupcake pan.
  8. In a large bowl, combine the flour, baking soda, salt, and sugar, and whisk together. In a separate bowl, combine the oil, champagne, buttermilk, egg, and vinegar. Slowly pour the wet ingredients into dry and mix until it is just blended.
  9. Scoop the batter into the prepared cupcake pan, filling each about 3/4 full. Bake for 15-17 minutes or until a toothpick inserted into the middle of a cupcake comes out clean. Cool completely on wire racks before frosting with champagne icing.
  10. In a large bowl, cream the butter with an electric mixer until it is smooth and fluffy. Add in the champagne and continue mixing until combined. Add the icing sugar in two parts, mixing until smooth and light. Frost the cooled cupcakes and garnish with sprinkles
